Since 1788, Herthadalen has brought people together across generations for parties and celebrations – and today, the story continues to live on. We know that a wedding is not just a party – it is a milestone. One of those days when the heart beats a little faster, and where the details mean everything. That is why we are also committed to it – in the food – in the planning – and in the atmosphere between you and your guests.
In the kitchen, we primarily work with seasonal produce from local fields, forests, and farms. The same applies when we compile the wine and drinks menu. Organic juice and Danish sparkling cider from the neighbouring farm. Throughout, we choose with care and with respect for the craft behind it.

Poached mackerel served with a summer salad from Marken & pickled gooseberries. Served with homemade bread made from flour from Østagergaard & cultured butter.

“We held our wedding at Herthadalen on Friday, August 23rd. We had a fantastic celebration in gorgeous surroundings with skilled staff. The food was absolutely amazing, which we already knew it would be after trying an Easter lunch there.
On the day itself, there were a couple of chairs that were cracked (including the groom's chair), which we brought to the staff's attention, and they were quick to replace them. Seasonal produce
At Herthadalen's forest kitchen, we work based on the concept People and Meals, where local produce, quality, and organic are at the heart of it.
Our menus are inspired by the season – with greens from Herthamarken, herbs from the forest, and meat from animals that have had a good life. For us, animal welfare and taste are inextricably linked.
A place with attitude
At Herthadalen, we make conscious choices – especially when it comes to what we serve our guests. For example, we use locally tapped tap water instead of expensive imported bottled water.
For us, sustainability isn't about symbolism, but about everyday action. Small choices that make sense and, all together, make a difference. We strive to be a place where responsibility, quality, and thoughtfulness go hand in hand – naturally & without pointing fingers.
GOOD CRAFTSMANSHIP
We greatly cherish good craftsmanship. In the kitchen, we pickle, bake, smoke, and ferment ourselves. We make our food from scratch with respect for the ingredients and the work behind them.
We believe that good craftsmanship can be tasted – and that it makes a difference when someone has had their hands in it all the way through.

You can taste it when ingredients are cultivated by enthusiasts – passionate people who obsess over every detail because they simply can't help themselves.

At Herthadalen, we put people first. Our guests' experiences are our greatest focus, and we are passionate about creating a place that allows for presence, peace, and connection to the earth.
The aim is to create a place where people and meals meet in community – and to provide the setting for life’s great celebrations: from the small moments of everyday life to life’s major events.
Nordic Aesthetics
At our place, food isn't just about taste – it also needs to look good. We care about aesthetics and are inspired by Nordic simplicity.
The colours are kept natural, the expression is clean, and we only use what makes sense for the dish. We source flowers and herbs as much as possible from our own herb garden or from the forest around us.
UNIQUE LOCATIONS
At Herthadalen & Ledreborg, we have a range of unique venues at our disposal. Some venues invite calm and contemplation, others grand moments and shared celebrations.
Common to them all is the location in the midst of forest and tranquility, the sense of presence, the aesthetics, and the feeling of being in a place where time may as well take its time.

Wedding in the forest
With views of Knapsø and just a few steps from the restaurant, we have created a wedding venue where nature is not merely a backdrop – but an active part of the moment. Here, there is a vast sky, birdsong in the background, and space for presence to settle in.
Many years ago, an old oak tree fell towards the lake and has since been given new life as part of the location. With great respect for the tree and its surroundings, we have carefully built a platform with an accompanying staircase that leads the bridal couple forward – right into the forest, surrounded by grass, roots, and old trunks.
Here, the ceremony is both informal and solemn at the same time. Guests gather in the greenery, the seasons are clearly felt, and the moment is allowed to unfold without haste.

Accommodation, transport, music, decor etc.
We do not (yet) offer accommodation at Herthadalen, which is why our usual recommendation is Comwell Roskilde – located about 20 minutes' drive from here – with good rooms, a peaceful atmosphere, and easy logistics (and advantageous. Reconciliation!)
In addition to accommodation, we have gathered a range of partners whom we know and trust. Transport to and from the party, music for both the ceremony and the dance floor, flowers, cake, graphics, and small details that tie the day together.
