Christening
You've just welcomed a tiny nugget of gold into your lives and might be facing your first big celebration. Whether you're hosting a naming ceremony, a christening, or a more informal get-together, the wish is the same: a day where you can lean back and be present in the moment – and celebrate your little one with the family and friends you hold dear.
Christenings often take place after Sunday service, and as a result, we typically get requests for Sunday lunch. This doesn't mean other solutions aren't possible, but our experience is that a relaxed Sunday morning with a good lunch creates the best setting for socialising and presence.
Below you can see our suggestion for a seasonal menu – composed using seasonal ingredients and intended as an informal yet atmospheric meal where both adults and children can join in.
Christening in green surroundings
Hold the christening or naming ceremony in the middle of the forest and experience a day where peace and nature can contribute to a more laid-back and cosy event, as most people wish for around a christening/naming.
At Herthadalen, there is a high ceiling, room for creativity, and ample opportunity to make use of the surrounding nature. You can also bring along games such as kubb or a pétanque set from home, so your guests can enjoy themselves with ball games in the green surroundings.

Starter
Pheasant breast with sauce of reduced chicken and smoked oil with herbs. Vegetable gratin with grated cheese from Søtoftes Jordbrug and summer's shoots.
Served with homemade bread made from flour from Østagergaard & cultured butter.
For children: Fresh potato salad with a giant meatball, radishes & greens in a ”lunchbox”.
Main course
Choose between: Free-range chicken from Dyssegaarden / Danish Duroc pork / Grilled white radish (V) or Krondyr (+95,-). Grilled lettuce from the farm tossed in herb cream, baked shallots, pickled currants & herbs from our own garden.
Potatoes with herbs and a green dish from the market are served at the tables.
Dessert
Chocolate rings from Friis Holm with vanilla cream & citrus herbs. Meringue peaks, fresh wild berries & blackberry ice cream.
After dinner
Organic coffee & tea.

Seasonal produce
At Herthadalen's forest kitchen, we work based on the concept People and Meals, where local produce, quality, and organic are at the heart of it.
Our menus are inspired by the season – with greens from Herthamarken, herbs from the forest, and meat from animals that have had a good life. For us, animal welfare and taste are inextricably linked.
A place with attitude
At Herthadalen, we make conscious choices – especially when it comes to what we serve our guests. For example, we use locally tapped tap water instead of expensive imported bottled water.
For us, sustainability isn't about symbolism, but about everyday action. Small choices that make sense and, all together, make a difference. We strive to be a place where responsibility, quality, and thoughtfulness go hand in hand – naturally & without pointing fingers.
GOOD CRAFTSMANSHIP
We greatly cherish good craftsmanship. In the kitchen, we pickle, bake, smoke, and ferment ourselves. We make our food from scratch with respect for the ingredients and the work behind them.
We believe that good craftsmanship can be tasted – and that it makes a difference when someone has had their hands in it all the way through.

At our place, food isn't just about taste – it also needs to look good. We care about aesthetics and are inspired by Nordic simplicity.
The colours are kept natural, the expression is clean, and we only use what makes sense for the dish. We source flowers and herbs as much as possible from our own herb garden or from the forest around us.
