Since 1788, Herthadalen has brought people together across generations for parties and celebrations – and today, the story continues to live on. At Herthadalen, we create the setting for anniversary celebrations, where presence, good food, and togetherness with family and friends are at the centre.
Some choose to celebrate the day intimately with a lunch, while others gather family and friends for a larger party with music and dancing. Whether it's Copper wedding, silver wedding or golden wedding, you are most welcome in the forest. We will help with all the practicalities – from setting the tables and flowers to planning the day's proceedings – so you can focus on each other and your guests. Below, we have gathered examples of how the day can take shape.
Hold your wedding anniversary in the middle of the woods
An anniversary marks a shared chapter – whether you're celebrating a few or many years together. At Herthadalen, we create the setting for a day where memories can be made and the celebration can unfold at a pace that feels right for you. Surrounded by the forest and the tranquility of nature, an atmosphere emerges where presence and togetherness are clearly highlighted.
The celebration can take many forms. It could be a quiet lunch with your closest friends and family, a dinner with speeches and reunions – or an evening where the party gradually builds. We tailor the setting to your wishes and ensure the day flows naturally from start to finish. Here, there is room for both tranquility, celebration, and the small moments that make the day your own.

BREAKFAST & EVENING
Example of a seasonal menu with ingredients from local producers. The welcome is served outdoors on the terrace overlooking Knapsø (weather permitting).
Choose between 5-hour or 7-hour arrangement in the woods.

Starter
Pheasant breast with sauce of reduced chicken and smoked oil with herbs. Vegetable gratin with grated cheese from Søtoftes Jordbrug and summer's shoots.
Served with homemade bread made from flour from Østagergaard & cultured butter.
For children: Fresh potato salad with a giant meatball, radishes & greens in a ”lunchbox”.
Main course
Choose between: Free-range chicken from Dyssegaarden / Danish Duroc pork / Grilled white radish (V) or Krondyr (+95,-). Grilled lettuce from the farm tossed in herb cream, baked shallots, pickled currants & herbs from our own garden.
Potatoes with herbs and a green dish from the market are served at the tables.
Dessert
Chocolate rings from Friis Holm with vanilla cream & citrus herbs. Meringue peaks, fresh wild berries & blackberry ice cream.
After dinner
Organic coffee & tea.

The event is 5 hours long. For breakfast – Sunday to Friday.
From 11:00 AM – 4:00 PM. By 5:00 PM at the latest.
Drinks will be charged based on consumption.

Price including welcome almonds, 3-course menu (starter, main course & dessert), organic coffee/tea, hall rental, table setting with white tablecloths, candles & seasonal natural flowers.
The event is 7 hours long. For breakfast or evening – Sunday to Friday.
Drinks will be charged based on consumption.

Seasonal produce
At Herthadalen's forest kitchen, we work based on the concept People and Meals, where local produce, quality, and organic are at the heart of it.
Our menus are inspired by the season – with greens from Herthamarken, herbs from the forest, and meat from animals that have had a good life. For us, animal welfare and taste are inextricably linked.
A place with attitude
At Herthadalen, we make conscious choices – especially when it comes to what we serve our guests. For example, we use locally tapped tap water instead of expensive imported bottled water.
For us, sustainability isn't about symbolism, but about everyday action. Small choices that make sense and, all together, make a difference. We strive to be a place where responsibility, quality, and thoughtfulness go hand in hand – naturally & without pointing fingers.
GOOD CRAFTSMANSHIP
We greatly cherish good craftsmanship. In the kitchen, we pickle, bake, smoke, and ferment ourselves. We make our food from scratch with respect for the ingredients and the work behind them.
We believe that good craftsmanship can be tasted – and that it makes a difference when someone has had their hands in it all the way through.
LOCAL PRODUCERS
You can taste it when ingredients are cultivated by enthusiasts – passionate people who obsess over every detail because they simply can't help themselves.
These are the types of collaborations we engage with on a daily basis. Common to them is an uncompromising approach to quality and great respect for both the raw materials, the animals and nature.

At Herthadalen, we put people first. Our guests' experiences are our greatest focus, and we are passionate about creating a place that allows for presence, peace, and connection to the earth.
The aim is to create a place where people and meals meet in community – and to provide the setting for life’s great celebrations: from the small moments of everyday life to life’s major events.
Nordic Aesthetics
At our place, food isn't just about taste – it also needs to look good. We care about aesthetics and are inspired by Nordic simplicity.
The colours are kept natural, the expression is clean, and we only use what makes sense for the dish. We source flowers and herbs as much as possible from our own herb garden or from the forest around us.
UNIQUE LOCATIONS
At Herthadalen & Ledreborg, we have a range of unique venues at our disposal. Some venues invite calm and contemplation, others grand moments and shared celebrations.
Common to them all is the location in the midst of forest and tranquility, the sense of presence, the aesthetics, and the feeling of being in a place where time may as well take its time.

Accommodation, transport, music, decor etc.
We do not (yet) offer accommodation at Herthadalen, which is why our usual recommendation is Comwell Roskilde – located about 20 minutes' drive from here – with good rooms, a peaceful atmosphere, and easy logistics (and advantageous. Reconciliation!)
In addition to accommodation, we have gathered a range of partners whom we know and trust. Transport to and from the party, music for both the ceremony and the dance floor, flowers, cake, graphics, and small details that tie the day together.
